Broccoli with Carrots

Broccoli

Ingredient:

1. One stalk of broccoli.

2. One small carrot.

 

Cooking Method and Preparation:

1. Wash, peel and slice carrot into small pieces.

2. Wash broccoli under cool water.

3. Chop broccoli stems and florets into small pieces.

4. Add broccoli and carrots to a saucepan or steamer and steam until tender.

5. Mash or puree as needed. If the veggies are diced small enough, this will make a wonderful and colorful finger food medley.

Remarks of Broccoli with Carrots:

Carrots are a rich source of carotene. The nutrient absorption of carrot carotene can be boosted by eating with foods containing oil such fried carrots and tempura dishes. 
 
When preparing broccoli, boil it for 2 to 3 minutes. Boiling broccoli longer than this can result in a drastic reduction of nutritional value. In particular water soluble vitamins and minerals such as vitamin C get drawn out of the broccoli into the broth it makes.
